Peanut Sauce Chicken Lettuce Wraps
I’ve eaten and made a lot of peanut sauces over the years,
but I’ve decided this sauce recipe our friends Mel and Ryan gave us is hands
down the best I’ve ever had. I have big plans to make this again doubling or tripling
the recipe, so I can stick portions in the freezer. Then I can pull it out, mix
it up with chicken or shrimp and Ta-Da! Easy weeknight dinner done!
Last night we used it for chicken lettuce wraps. So easy and
so so so delicious! We used butter lettuce which is pretty, but romaine might
be easier to pick up. The strawberry jalapeno margaritas Curtis whipped up weren’t
bad either!
Peanut Sauce Chicken Lettuce Wraps
1 recipe peanut sauce (below)
3 chicken breasts
Butter or romaine lettuce, washed and dried
Toppings:
Carrot, sliced thin
Red bell pepper, sliced thin
Cilantro
Purple cabbage, sliced thin
Green onions, sliced
Peanuts
Sesame seeds
Cook and shred chicken (I boiled it for about 10 min and
then shredded it with two forks). Add the peanut sauce and ½ cup cilantro and
warm it all up together.
Put the peanut sauce chicken in the lettuce and top with shredded
carrots, cabbage, red bell pepper, green onions, peanuts, sesame seeds.
Peanut Sauce Recipe
½ cup peanut butter
4 TBSP rice vinegar
4 TBSP lime juice
6 TBSP olive oil
2 TBSP soy sauce
2 tsp salt
½ tsp red pepper flakes
2” fresh ginger
2 TBSP garlic (about 5-6 cloves)
2 TBSP sugar (I used maple syrup)
2 TBSP honey
½ cup cilantro – mix in later
Add all the ingredients, except the cilantro, to the blender
or food processor and blend until smooth and creamy
Make chicken lettuce wraps, add as a dressing to your
favorite salad, or serve with seafood, beef, vegetables, etc.
